The former Scotland international linked up with the Championship club in January from Blackburn Rovers.
He made 10 appearances for Stoke last term and has been training with Tony Pulis' side during pre-season.
Matteo has now accepted a deal for the coming season and Pulis is delighted to secure the former Liverpool and Leeds United defender.
"We are very pleased to have Dom signed up for another season," Pulis told the club's official website.
"He adds great experience to the squad, the lads all like him and he showed last season he is still a good performer."
Matteo is in the squad for Stoke's Championship opener against Cardiff on Saturday and will be joined by fellow new signing Ryan Shawcross, who has arrived on loan from Manchester United.

The deal for the Guinea international is initially worth 400,000 euros (£272,000), but this figure could increase.
Stoke will receive an additional payment of 100,000 euros (£68,000) from the Portuguese side if Bangoura scores an agreed amount of goals, while the Potters will also be entitled to 20 per cent of any future transfer.
Bangoura arrived at the Britannia Stadium for a club record fee of £1million in 2005 from Standard Liege.
However, the forward struggled to cement a regular place in the Stoke first team and made only 28 appearances in which he scored nine goals.

Stoke City boss Tony Pulis has alluded to an interest in Leeds United's Eddie Lewis. Pulis is hoping to bring in a left-winger before the close of the transfer window and Lewis is among his targets.

Stoke bring in defensive duo

Craddock, 32, joins on an initial one-month loan deal from Wolves, and is expected to extend that deal until January.
The former Sunderland man is available for Saturday's game against Charlton.

De Laet, meanwhile, has signed on a three-year contract from Belgian side Royal Antwerp.
The 18-year-old has joined for an initial £100,000, and manager Tony Pulis believes he will prove a valuable asset for the club.
"I am delighted that we have managed to sign Richie," he said. "He is a very good player and I am certain he will prove to be a very good acquisition for Stoke City.
"I am, however, disappointed that we have not managed to bring in more players at this time, but I am absolutely focused on bringing in further players before the end of the month."

Stoke City have rejected a bid from Blackpool for Andy Wilkinson, and are hoping to extend the defender's contract. Wilkinson had a spell on loan at Bloomfield Road last season and Blackpool were looking to land the 23-year-old on a permanent deal. The Seasiders have made an improved offer of £150,000 for the Stoke youth product, which has been repelled by Tony Pulis.

Stoke star jailed

Stoke City's Vincent Pericard has been jailed for four months for perverting the course of justice.
Former Portsmouth striker Pericard claimed his stepfather was at the wheel of his car when he was caught travelling at 103mph near Plymouth.
The 24-year-old was driving a Mercedes CLK 500 on the A38 dual carriageway on 6th March last year.
Pericard, who played for Juventus before joining Portsmouth, lied that his stepfather, Jack Pericard, was driving at the time.
At Plymouth Crown Court, Pericard, who has twice been disqualified from driving for previous speeding offences, pleaded guilty to one charge of perverting the course of justice.
He joined Stoke on a free transfer at the end of the 2005-06 season.
The court heard he was speeding while travelling from his Portsmouth home to a training session in Plymouth where he was playing for Argyle.
